The Glasgow Residential Restaurant is a new two-story, 53,000-square-foot student dining facility on UC Riverside’s campus. The project features a modern, residential dining program with multiple food stations, an exhibition bakery, a demonstration cooking platform, convenience store, patio terrace, two private dining rooms, and over $6 million in food service equipment. It includes a 3,500-square-foot main commercial kitchen, nine walk-in cooler/freezers, dishdrop and dishwashing areas, and administrative offices for restaurant/kitchen and catering operations. The building, constructed of structural steel frames, seats 830 people and replaced the existing campus dining hall. It also houses UC Riverside’s catering operations and provides service to its food trucks.
The project was completed ahead of schedule and achieved LEED Silver certification.
